You know how you sometimes come across recipes in books that are dairy-free, or gluten-free, or maybe have tips for converting the regular recipes to suit your specific needs? It often seems like you have to buy a whole cookbook and you end up with a small portion of the recipes that actually work for you, as is. With this book, Rachel Conners (aka Bakerita) focuses exclusively on those “special considerations” that sometimes feel like afterthoughts. This book is full of gluten-free, dairy-free, and refined sugar-free recipes for those needing those approaches in their kitchens. Confession: I don’t need those approaches, so many (most?) of the recipes in this book remain unused by me. And because I don’t need those special ingredients and considerations I don’t have them readily on hand and my motivation to acquire them “just because” is low. That said, this is a nicely put together book with a wide variety of recipes, but it sits unused on my shelf, which is a sad state for a cookbook to be in. If you happen to have things like tapioca flour and and coconut sugar on your shelves, then maybe you’re the one to rescue this book and help it reach its full potential…because I am not that person!
